Black Forest Cake

Before make-up my cake was pale colour and didn't have eyes, nose n mouth.

After make-up, does it scary ?? Suitable for celebrate halloween with this cake.

Chocolate Indulgence







Here is the sponge cake recipe.

Ingredients:-

(A)
4 Egg Yolk
16g Caster Sugar
1/2tsp Vanilla Essence

(B)
4 Egg White

(C)
100g Caster Sugar
(D)
84g Cake Flour
16g Cocoa Powder
(E)
50g Corn Oil
Method:-
  1. Beat Ingredients A until light and fluffy.
  2. Beat Ingredient B until soft peak. Add in ingredient C, continue beat until stiff.
  3. Mix the egg white mixture with Ingredients A until well-blended.
  4. Fold in Ingredients D, mix until well-combined. Add in Ingredient E, mix until well incorporated.
  5. Pour it into a greased and lined round mould.
  6. Bake at 180degC for 30-40 minutes. Remove the cake immediately when baked.

Chocolate Indulgence Recipes.

Ingredients:-

(A)

60g Dark Chocolate (chopped)

(B)

30g Caster Sugar

2 Egg Yolk

(C)

200g whipped Cream

Method:-

  1. Chocolate cream: Place Ingredient A over simmering water, stir until it has melted. Place Ingredients B over simmering water stir until it thickens. Remove it and whisk until cool. Add in Ingredient A, mix until well-blended. Add in Ingredient C, mix until well incorporated.
  2. Cut the cake into 3 layers. Place 1 layer of cake onto the cake board and spread half of the chocolate cream onto the cake. Center and top spread chocolate cream too.
  3. Cover the whole cake with a thin layer of the chocholate cream. Keep in the fridge for 2 hours.
  4. (Continue below number '5' ) .

Chocolate Glazing (Topping)

200g Cooking Chocolate (melted)

75g Milk

75g Whipping Cream

10g Butter

  1. Cook the milk and whipping cream until boil.
  2. Add in the melted chocolate and mix until well-blended.
  3. Add in butter, mix until well-combined.
  4. Set aside to cool to pouring consistency, serve immediately.
  5. Remove the cake from the fridge. Pour chocolate glazing over the cake to coat it evenly, leave it aside for 10 minutes to let it set. Place it in the fridge for 30minutes.
  6. Done, can taste the cake already.

Tiramisu







This is 2nd tiramisu recipes that i make. I was learning and pratice to make tiramisu for my special person in special day. Was failure when i taste the cake it too much cream in each layer especially the above layer and the coffee flavor not enough strong and i didt use 'kahlua' . Luckily i still have time to make again. Wish me luck : )

Fatt Koh



I done this fatt koh quite late after i back from watch movie. I remember it was 11pm something. Prepare all the ingredients and start my work, i spend 30minutes to done this fatt koh. I never make b4, when it was cooked i was so happy saw it and it really SMILE with you.

Marble Chiffon





Ingredients:-


(A)
3 Egg Yolks
Pinch of Salt
30g Caster Sugar
50g Warm Milk
40g Warm Corn Oil
1/2tsp Vanilla Essence
75g Cake Flour (sifted)

(B)
4 Egg White
1/4tsp Cream of Tartat
40g Sugar

Chocolate Paste
30ml milk
20g Caster Sugar
5g Cake Flour
10g Cocoa powder
5g Butter


Method:-
  1. Mix all chocolate paste ingredient together in double boil till sugar dissolves and you get chocolate mixture. Sifted the chocolate mixture if lumpy. Set aside for later use.
  2. Whisk egg yolk, sugar, vanilla and salt till sugar dissolves.

  3. Add in warm milk and oil mix till well combined.

  4. Fold in flour till batter incorporated.

  5. Beat egg white until big bubbles formed. Sprinkle in cream of tartar and beat until it is white in colour. Add sugar gradually and beat till stiff perks formed.

  6. Pour 1/2 egg white into flour mixture (4) and blend well.

  7. Pour flour mixture into the rest of the egg white and fold till blended.

  8. Remove 1/4 batter and mix it with the chocolate paste, blend well.

  9. Pour the 2 batter into ungreased tube pan using your imagination and create your own marble effect.

  10. Bake at 180degC 45-60 minutes or untill cooked.


Is soft and fluffy cake. The marble effect i done was not nice Chocolate paste can replace it with chocolate emulco if don't want to cook/prepare the chocolate paste.

Choc Almond Cookies


Ingredients:-

(A)
250g Butter
110g Icing Sugar (original 120g)
1 Egg
1 Egg Yolk
1/2tsp Vanilla Essence

(B)
300g Plain Flour (sifted)
150g Ground Almond (original 200g)
100g toasted Almond (halved) (original 200g)

Decoration
140pcs small paper cups (original 100pcs)
400g Cooking Choc (melted) (original 500g)
100g toasted Nibbed Almond (original 200g)


Method:-

  1. Cream A till well combined. Mix in B to form soft dough.
  2. Shape into small balls and wrap up half almond.
  3. Bake at 180DegC till golden brown.
  4. Remove and leave to cool.

  1. Decoration : Place cookies into small paper cups, cover cookie with melted chocolate and sprinkle some toasted nibbed almond to top.
  2. Chill in the fridge to set the chocolate, before storing in a container.

Pearl Sago, Duoyong & Milk Jelly Mooncakes




Jelly Mooncakes really not easy to make cause you need to wait the jelly egg yolk hard then boil / cook another jelly as filling then need wait again then boil / cook again for the last step for the skin.

Coffee Chiffon

To those who like coffee drinks can try make coffee chiffon.

Ingredients:-

2tbsp Instant Coffee
50ml Warm Milk
4 Egg Yolk
50ml Corn Oil
100g Caster Sugar
100g Cake Flour / Self-Raising Flour

4 Egg White
1/4tsp Cream of Tartar


Method:-
  1. Dissolve instant coffee in warm milk.
  2. Whisk egg yolks with 50gm sugar till sugar dissolves.
  3. Stir in coffee mixture & corn oil.
  4. Fold in flour till batter batter incorporated.
  5. Beat egg whites with cream of tartar till foamy, add sugar gradually and beat in high speed untill stiff peak form.
  6. Fold in 1/3 of egg white foam into coffee batter and mix evenly. Pour into remaining egg white foam and fold till evenly combined.
  7. Pour batter into a tube pan or cake pan and bake on preheated oven at 180degC for 45 minutes or until cooked.

Cream Cheese Chiffon Cake





Ingredients:-

65g Cream Cheese
30g Butter
70g Milk
75g Cake Flour (sifted)
1/4tsp Baking Powder (sifted)
1/4tsp Salt
4 Egg Yolk

4 Egg White
1/4tsp Cream of Tartar
90g Caster Sugar


Method:-
  1. Cook cream cheese, butter and milk over double boiler until thick.

  2. Strain and set aside to cool.

  3. Use hand whisk mix egg yolks and salt together.

  4. Add in cream cheese mixture and whisk till combined.

  5. Fold in sifted flour until batter is smooth.

  6. Beat egg whites with cream of tartar till foamy, add sugar gradually and beat in high speed untill stiff peak form.

  7. Fold in 1/3 of egg white foam into egg batter and mix evenly. Pour into remaining egg white foam and fold till evenly combined.

  8. Pour batter into a 21cm tube pan or cake pan and bake on preheated oven at 170-180degC for 50-60 minutes or until cooked.

  9. Remove from oven, invert cake onto table until completely cool.

Pandan Chiffon


Ingredients:-

(A)
3 Eggs Yolk
1tbsp Pandan Juice
75g Coconut Milk
1/8tsp Salt
2tbsp Oil
40g Caster Sugar
70g Self-Raising Flour

(B)
3 Eggs White
1/8tsp Cream of Tartar
50g Caster Sugar

Method:-

Beat up egg yolks. Add sugar, salt, oil, coconut milk and pandan juice mix well till sugar dissolves.

Fold in flour until batter incorporated.

Beat egg whites with cream of tartar till foamy, add sugar gradually and beat in high speed untill stiff peak form.


Fold in 1/3 of egg white foam into egg batter and mix evenly. Pour into remaining egg white foam and fold till evenly combined.

Pour batter into a tube pan or cake pan and bake on preheated oven at 180degC for 45 minutes or until cooked.

Moist Choc Cake




Ping Pi Red Bean Mooncakes




Mooncakes Festival is around :D and i like eat mooncakes much much. This year i learn to make, bake mooncakes by myself but ........ will buy mooncakes from shopping also.
Above ping pi mooncakes pictures i make it myself and is 1st time... Actually ping pi mooncakes is very easy only need use "Koh Fun Flour ", Icing Sugar, Shortening, Ice Water and some color to make the skin and filling can direct buy from bakery shop.
My mum say the taste like outside sell mooncakes taste but got abit different one cause im not perfectly or pro make mooncakes. hehe
The skin too thick right ? Should reduce the ping pi skin to make it thin.

Oats Pumpkin Sunflower Seed Chewies



Ingredients:-

(A)
50g Brown Sugar
65g Golden Syrup
50g Butter

(B) (all toasted)
125g Rolled Oats
35g Pumpkin Seeds
35g Sunflower Seeds
20g Sesame Seeds

Method:-
  1. Place A in a saucepan over low heat, stir until dissolve. Keep stirring at low heat for another few minutes until slightly thick. Allow to cool for few minutes.

  2. Stir B into A until all the oats and seeds are evenly coated with the above mixture.

  3. Press mixture into a square baking tray. Press to compact and smooth out the surface with the back of a spoon.

  4. Chill in the refrigerator until mixture firms up.

* Need to adjust the sugar n butter

Steamed Banana Cake



Ingredients:-

(A)
170g Banana (mashed)
1 tsp Bicarbonate Soda
1/8 tsp Banana Essence (optional)

(B)
100g Brown Sugar
3 Egg
100g Pao Flour
1tsp Baking Powder
60g Corn Oil

(C)
2 Egg
60g Castor Sugar
25g Water
65g Pao Flour


Method
  1. Mix Ing A and set aside for 1 1/2 hour. Ing B, beat egg and sugar until light and fluffy, fold in pao flour and baking powder (except corn oil) and set aside for another 1 hour.

  2. Add corn oil to Ing A and B batter. Pour the batter into pan / tin until half full. Steam for 15 minutes

  3. Ing C beat the egg, sugar and water until light and fluffy. fold in pao flour and mix well, add the batter into pan / tin until full. Steam for another 10 minutes. Serve

Correct Way of Eating Fruits

We all think eating fruits mean just buying fruits, cutting it and just popping it into our mouth.

It's not as easy as you think, it's important to know how and when to eat.

What's the correct way of eating fruits?
It means not eating fruits AFTER YOUR MEAL! - Fruits should be eaten on a EMPTY STOMACH

If you eat fruit on empty stomach, it will play a major role to detoxify your system, supplying you with a great deal of energy for weight loss and other life activities.

Fruits is the most important food - Let's say you eat two slices of bread and then a slice of fruit..

The slice of fruit is ready to go straight through the stomach into the intestines, but it is prevented from doing so.

In the meantime the whole meal rots and ferments and turn to acid. The minute the fruit comes into contact with the food in the stomach and digestive juices, the entire mass of food begins to spoil.

So please eat fruits on an empty stomach or before meals! You have heard people complaining - every time i eat watermelon i burp, when i eat durian my stomach bloats up, when i eat banana i feel like running to the toilet etc. actually all this will not arise if you eat the fruit on empty stomach. The fruit mixes with the putrefying other food and produces gas and hence you will bloat.

Graying hair, balding, nervous outburst and dark circles under the eyes - all these will not happen if you take fruits on empty stomach.

There is no such thing as some fruits, like orange and lemon are acidic, because all fruits become alkaline in our body, according to Dr. Herbert Shelton who did research on this matter. If you have mastered the correct way of eating fruits, you have the Secret of beauty, longevity, health, energy, happiness and normal weight.

When you need to drink fruit juice - drink only fresh fruit juice, NOT from the cans. Don't even drink juice that has been heated up. Don't eat cooked fruits because you don't get the nutrients at all. You only get to taste.
Cooking destroys all the vitamins.

But eating a whole fruit is better than drinking the juice. If you should drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it.

You can go on a 3-day fruitfast to cleanse your body. Just eat fruits and drink fruit juice throughout the 3 days and you will be surprised when your friends tell you how radiant you look.


Drinking cold waterrinking after meal = Cancer ! Can you believe this ?
For those who like to drink cold water, this article is applicable to you. (me)

It is nice to have a cup of cold drink after a meal. However, the cold water will solidify the oily stuff that you have just consumed. It will slow down the digestion. Once this sludge reacts with the acid, it will break down and be absorbed by the intenstine faster than the solid food. It will line the intenstine. Very soon, this will turn into fats and lead to cance. It is best to drink hot soup or warm water after a meal.

Kiwi
Tiny but mighty. This is a good source of potassium, magnesium, vitamin E & fiber. Its vitamin C content is twice that of a orange.


Apple
An apple a day keeps the doctor away? Although an apple has a low vitamin C content, it has antioxidants & flavonoid which enchances the activity of vitamin C thereby helping to lower the risks of colon cancer, heart attack & stroke.
