Zebra Cake (Failed)




This is the zebra cake i make yesterday, still failed. The bottom like the previous zebra cake even i change the water to hot water. I get this recipe from Jo's Deli Bakery.

Here the ingredients and method.

6 eggs
110g castor sugar
150g cake flour
1/2 tsp baking powder
1/2 tsp emulsifier
100g butter (melted)
30g condensed milk
1 tsp vanilla essence (optional)

2 tsp cocoa powder
3-4 tbsp water
1 tsp choc emulco
Dissolve cocoa powder and choc emulco in water


  1. Preheat oven at 170 degC. Prepare and grease a 8 inch round cake pan.
  2. Sift flour and baking powder. Set aside.
  3. Beat eggs, flour in (2), castor sugar and emulsifier on high speed for 10 minutes or until batter turns light and creamy, i.e. thick ribbon state. To test, lift beater. Batter drops from beater should disappear when you count from 1 to 10.
  4. Pour melted butter, condensed milk and vanilla essence (if any). Mix at slow speed.
    Divide batter into 2 equal portions. Fold chocolate solution into one of the batters.
  5. Using tablespoon, scoop 3 tbsp of uncoloured batter into centre of cake pan. Then, scoop 3 tbsp of chocolate batter onto the uncoloured batter you just scooped into the pan.
  6. Repeat until you have finished about half of the batter. Reduce to 2 scoops each now and continue layering as (6). Reduce the amount of batter gradually until you only pour 1 scoop of each batter finally. The circles become smaller and smaller as your pour.
  7. Sprinkle almond nibs or flakes to cake. Bake at 170 degC for 35 minutes.
  8. Let cake in pan for 10 minutes before turning it on to a wire rack to cool complete

Hazelnut Cookies






This Cookies is very very simply just need 4 ingredients then u can make a yummy cookies.

Ingredients : -
115g Butter
40g Castor Sugar
30g Ground Hazelnuts
110g Plain Flour

Method
  1. Use mixer to beat the butter and sugar until light and fluffy.
  2. Add in the ground hazelnuts, use mixer to beat until it is well combined.
  3. Fold in the sifted flour will become soft dough.
  4. Put the dough into piping bag with large fluted tube if want to make a shape for cookies.
  5. Place one piece of choc chip on top of each of the cookie dough.
  6. Bake in preheat oven 180C for about 30-40 minutes or until browned.
  7. Leave it cool then storage in airtight container. (DONE)

It is easy this cookies recipe. Me and my parents feel the cookies is abit oily and sweet, please adjust the butter and sugar. (Makes approx 40)

Failure Cake


My Failure Cake :(
I follow Zebra Cake Recipes just didn't add the choc emulco and didn't make like zebra strip.
Result out top of cake ok just bottom not ok ( like uncooked and look like agar-agar right ).
Very sad sad sad, taste ok but fail :`(
Do anyone know what is the mistake i make ?

Crispy Almond Slices


Ingredients :-
120g Plain Flour (sifted)
Pinch of Salt
3 Egg Whites
100g Castor Sugar
1tsp Vanilla Essence
150g Almonds


Beat eggs white with salt till foam. Gradually add in castor sugar and vanilla essence . Beat until it thickens.
Add in flour and mix well only add in almonds.

Spread mixture into a greased square tin.
Preheat oven 170C, 25-30 minutes or until light brown.

Remove and place it on a wire rack to cool.
Wrap dought with aluminium foil and keep for 2days

Cut the dought into thin layers and place single layer onto a baking tray.
Bake in oven 160-170C for 20-30minutes or until it is dry and crispy.

Happy B'day Snookie

1st day brought him back, here is his younger look, very small,cutie and ppl say he look like little lamb (HAHA)






Snookie latest look but he look like sleepy and 1 more thing he don't like is take picutre.
When i take my hp wan take his picture, he will turn his face to other side or go other place sit/lay.

Whole Meal Bread




Ingredients :-
175g high protein flour (bread flour)
75g whole meal flour
20g brown sugar
5g salt
4g instant yeast
160ml cold water
17.5g shortening

Method
  1. Combine flours, brown sugar, salt and instant yeast into a mixer. Pour in cold water, beat until form dough. Lastly add in shortening , beat until a smooth and elastic dough is formed. (if use hand mixer need to hold loudly)
  2. Place dough into a warm place, cover and leave to rise until doubled inside.
  3. Divide dough into each portion. knead to round shapes and leave to rise for 15 minutes.
  4. Roll up the dough and roll up. Place into greased mould, leave aside for 60minutes or sie up to 80% full. (But mine rise up to 100+% cause went out for dinner, is over rise for 2 hours )
  5. Bake in preheat oven at 200 deg C for 35 minutes or until cooked. Remove bread immediately.(mine bake for 30minutes)

    *the next day i eat the bread was feel hard. don't know which part i do not correctly do. After i know the mistake will let you all know it :)

Jackfruits Cake



Ingredients :-
250g Cake Flour (sifted)
2 tsp Baking Powder (sifted)
250g Butter
200g Castor Sugar
6 eggs
200ml Evaporated milk (but i use full cream milk)
Jackfruits - cut into slices (i use 5 seeds/pieces jackfruits)
Method
1) Melt butter and castor sugar until light and fluffy.
2) Add eggs one at a time and beat well. Add flour, baking powder, milk and jackfruit slices.
3) Pour mixture into any baking tin/pan (i use round pan)
4) Bake in oven 180 deg C for 1 hour - 1hour 15 minutes or until golden brown.
*Need adjust your baking time and oven deg C

Dot Love Biscuits



Ingredients :-
(A)
150g plain flour (sifted)
25g corn flour (sifted)
20g cocoa

(B)
100g butter
100g castor sugar
1 egg yolk
1 tsp vanilla essence
- Preheat oven 180 deg C.
- Mix all ingredients (A). Beat ingredients (B) well.
- Add egg yolk and vanilla essence. Continur beat for 1 minute.
- Form a dough. Cut into love shapes with pastry cutter or press cutter.
- Put on greased tray. Prick with fork to prevent it from rising.
- Bake in preheat oven at 180'C for 20 minutes.
* If don't want too sweet, reduce the castor sugar.

Carrot Cupcakes


Ingredients:-
180g all purpose flour (but i use plain flour)
1 tsp baking powder
1 tsp baking soda
1/2 cinnamon powder or 1/4 cinnamon powder
140g brown sugar
180g butter (melted)
4 eggs
150g carrot, grated
100g raisin, soaked in tbsp lemon juice
grated 1 lemon rind
- Prepare baking cups. Preheat oven 180'C
- Sift all purpose flour, baking powder, baking soda, cinnamon powder into a bowl. Put aside
- Beat melted butter and brown sugar until light or fluffy, add eggs one at a time.
- Put all the sift flour into the mixer bowl and beat.
- Add in carrot grated, raisin and lemon rind. Fold using a wooden spoon don't overmix the batter. (I use a normal spoon)
- Prepare the baking cups with the mixture.
-Bake in preheat oven in 25-30 minutes until golden brown and skewer inserted into the centre of cupcakes comes out clean.
- Transfer to wire rack to cool.

Can make 13cupcakes.
Who does't like cinnamon smell put less (1/4 cinnamon powder).

Almond Cookies


Actually i wanna make cashew nut cookies but i went to bakery shop their didt sell cashew nut ground so i change to make almond cookies.

Ingredients:-
150g Butter
100g Icing Sugar
2 eggs ( 1 egg for glaze cookies )
250g cake flour
1 tsp baking powder
100g ground almond

For Topping :-
Raisin & Choc Chips


1. Preheat oven at 180'C
2. Beat butter and sugar until mix up and add egg, beat it until creamy o fluffy
3. Fold in cake flour, baking powder and ground almond mix well can form a dough
4. Use a cookie cutter o cookie press to press the dough into crescent shape. Place to baking tray.
5. Put raisin o choc chips on top of each cookie for decoration.
6. Brush cookies with egg glaze
7. Bake in preheat oven for 20-30 minutes until golden brown colour.
8. Leave it cool then storage in airtight container.

Mixer Butter Cake

Ingredients :-

160g butter
150g caster sugar
4 eggs
140g plain flour, sifted
30g cornflour, sifted
1 tsp baking powder, sifted
1 tsp vanilla essence
80ml milk

This cake is very simply, easy and everyone can do it.

Preheat oven at 180 degree celsius

What you need to do is prepare all the ingredients and put all inside the mixer bowl.

Beat with mixer at slow speed until all combined then increase to medium speed, beat until creamy.

Pour batter into baking tin.

Start bake in preheated oven for 45minutes until golden brown

After 5 minutes, turn cake out onto a wire rack to cool and serve

Choc Chips Cookies


Mmmm...... is my 1st time use/post blog and is my 1st time baked.
I would like to intro my 1st recipes.

Here is the ingredients:-

125g butter
1 egg
1/4 tsp baking powder
flour & sugar (don't know the quantity - gram cause not yet buy weight machine :(
chocolate chips ( as much as u like)


* Melt the butter in hot pan.
* Mix up butter with sugar ( not yet buy mixer so i use my hands to beat it : (
* beat butter & sugar until creamy.
* Add flour & baking powder and give it a good stir and add some chocolate chips, blend well into a dough.

Prepared trays, lightly grease baking trays with magerin take a small pieces of dough.
Allow enough space in between the cookies to expand.
Bake for 180'C 18-20 minutes or until golden brown.


Done my 1st experience "Choc Chips Cookies"

The taste is not yummy cause i simply put the flour and sugar and beat time not enough.Result come out can see the sugar.Will try make again after i brought mixer and weight machine : )
