Chocolate, Mocha, Egg Steamed Cake



Ingredients:-
(A)
12 egg yolk
7 egg whites
375g sugar (I used 350g)
20g emulsifier

(B)
200 gr flour
40 gr milk powder
1 teaspoon baking powder

(C)
200g butter / margarine
50g coconut milk



Method:
Prepare the pan 22x22x7cm, greased and line baking sheet.
Mix ingredients B. Set aside.
Whisk ingredients C until smooth - set aside.
Beat ingredients A till thick and fluffy, add B and mix well
Add ingredients C and continue to mix till well combined
Divide batter into three equal parts. One part add Chocolate paste
Add Mocca paste in the 2nd parts
Let the other part remain
Pour Chocolate batter into the pan and steamed it for 10 minutes until cooked
Pour Mocca batter and continue to steam it again for 10 minutes,
Lastly pour white batter, steamed for 25 minutes.
Remove, let cool. Remove from pan, cut into pieces.

Marble Cake


Here is the recipe.

Ingredients :-
225g Unsalted Butter (Anchor Unsalted Butter)
4 Eggs
210g Caster Sugar
225g Self Raising Flour
50g Milk
30g Cocoa Powder

Method
  1. Cream butter with hand mixer.
  2. Add in caster sugar beat until light and fluffy.
  3. Add in eggs one by one. Beat till pale and creamy.
  4. Fold in flour until well incorporated. Add in milk and mix well.
  5. Take half of the above batter and mix in with cocoa powder.
  6. Pour plain batter into greased pan, spoon the choc batter over the plain batter and swirl it to make marble effects.
  7. Bake at 180C for 55 minutes.

* Should have a try to make this cake.

Chocolate Indulgence







Here is the sponge cake recipe.

Ingredients:-

(A)
4 Egg Yolk
16g Caster Sugar
1/2tsp Vanilla Essence

(B)
4 Egg White

(C)
100g Caster Sugar
(D)
84g Cake Flour
16g Cocoa Powder
(E)
50g Corn Oil
Method:-
  1. Beat Ingredients A until light and fluffy.
  2. Beat Ingredient B until soft peak. Add in ingredient C, continue beat until stiff.
  3. Mix the egg white mixture with Ingredients A until well-blended.
  4. Fold in Ingredients D, mix until well-combined. Add in Ingredient E, mix until well incorporated.
  5. Pour it into a greased and lined round mould.
  6. Bake at 180degC for 30-40 minutes. Remove the cake immediately when baked.

Chocolate Indulgence Recipes.

Ingredients:-

(A)

60g Dark Chocolate (chopped)

(B)

30g Caster Sugar

2 Egg Yolk

(C)

200g whipped Cream

Method:-

  1. Chocolate cream: Place Ingredient A over simmering water, stir until it has melted. Place Ingredients B over simmering water stir until it thickens. Remove it and whisk until cool. Add in Ingredient A, mix until well-blended. Add in Ingredient C, mix until well incorporated.
  2. Cut the cake into 3 layers. Place 1 layer of cake onto the cake board and spread half of the chocolate cream onto the cake. Center and top spread chocolate cream too.
  3. Cover the whole cake with a thin layer of the chocholate cream. Keep in the fridge for 2 hours.
  4. (Continue below number '5' ) .

Chocolate Glazing (Topping)

200g Cooking Chocolate (melted)

75g Milk

75g Whipping Cream

10g Butter

  1. Cook the milk and whipping cream until boil.
  2. Add in the melted chocolate and mix until well-blended.
  3. Add in butter, mix until well-combined.
  4. Set aside to cool to pouring consistency, serve immediately.
  5. Remove the cake from the fridge. Pour chocolate glazing over the cake to coat it evenly, leave it aside for 10 minutes to let it set. Place it in the fridge for 30minutes.
  6. Done, can taste the cake already.

Tiramisu







This is 2nd tiramisu recipes that i make. I was learning and pratice to make tiramisu for my special person in special day. Was failure when i taste the cake it too much cream in each layer especially the above layer and the coffee flavor not enough strong and i didt use 'kahlua' . Luckily i still have time to make again. Wish me luck : )

Fatt Koh



I done this fatt koh quite late after i back from watch movie. I remember it was 11pm something. Prepare all the ingredients and start my work, i spend 30minutes to done this fatt koh. I never make b4, when it was cooked i was so happy saw it and it really SMILE with you.

Steamed Banana Cake



Ingredients:-

(A)
170g Banana (mashed)
1 tsp Bicarbonate Soda
1/8 tsp Banana Essence (optional)

(B)
100g Brown Sugar
3 Egg
100g Pao Flour
1tsp Baking Powder
60g Corn Oil

(C)
2 Egg
60g Castor Sugar
25g Water
65g Pao Flour


Method
  1. Mix Ing A and set aside for 1 1/2 hour. Ing B, beat egg and sugar until light and fluffy, fold in pao flour and baking powder (except corn oil) and set aside for another 1 hour.

  2. Add corn oil to Ing A and B batter. Pour the batter into pan / tin until half full. Steam for 15 minutes

  3. Ing C beat the egg, sugar and water until light and fluffy. fold in pao flour and mix well, add the batter into pan / tin until full. Steam for another 10 minutes. Serve

Marble Butter Cake


Ingredients :
250g Butter
70g Margarine
5 Eggs
250g Castor Sugar
1tsp Vanilla Essence
280g Cake Flour
1tsp Baking Powder
1tsp Cocoa Powder
1tsp Choc Emulco
Method
  1. Cream butter, margarine & sugar until light & fluffy.
  2. Add eggs one at a time and beat well.
  3. Mix vanilla essence until evenly blended.
  4. Fold in flour until well incorporated.
  5. Take 1/4 of the above batter and mix with cocoa powder & choc emulco until well blended.
  6. Pour plain batter into greased pan, spoon the choc batter over the plain batter and swirl it to make marble effects.
  7. Bake at 180C for 55 minutes.

*Adjust the butter and sugar

(My cake bake out was not that soft cause i use wrong method. The method i use is beat the butter until fluffy only add in eggs n sugar, this is WRONG METHOD. So you all must follow the above method is CORRECT.)

Honeycombs Cake

Ingredients:-

180g Sugar
210ml Water
50g Butter
3 eggs
80ml Condensed milk
100g All purpose flour
1 1/2tsp Baking soda


In a saucepan over low heat, caramelize the sugar until it turns a dark golfen brown.

Slowly and carefully pour the water into the caramel. CAUTION! The caramel is very hot and the water will quickly boil and steam. Stir until the caramel is dissolved in the water and it becomes a thin syrup. Remove from heat.


Put in the butter.


Mix together and egg and condensed milk in a bowl


Sift the flour and baking soda together into the egg and milk. Mix well.
Pour the caramel butter sauce into the batter and mix well.


Pour the batter into greased round cake pan. Let it sit for 5minutes for the bubbles to begin developing.
Bake at 160C with bottom heat only (no convection) for 1 hour or 1 hour 10minutes or until a skewer inserted into the cake comes out clean.
When the cake is cool, turn it out onto a plate. Slice and serve.

Zebra Cake

Finally i make my zebra cake. I didt add the water and choc emulco into my cake batter. Below is my ingredients :-


3 Eggs

55g Castor Sugar

75 Cake Flour

1/4tsp Baking powder

1tsp Emulsifier

50g Butter

15g Condensed milk

1 1/2tsp cocoa powder


Beat eggs, flour in , castor sugar and emulsifier on high speed for 10 minutes or until batter turns light and creamy.




Pour melted butter, condensed milk. Mix at slow speed.


Divide batter into 2 equal portions. Fold chocolate solution into one of the batters.
Using tablespoon, scoop 3 tbsp of uncoloured batter into centre of cake pan. Then, scoop 3 tbsp of chocolate batter onto the uncoloured batter you just scooped into the pan. Repeat until you have finished about half of the batter. Reduce to 2 scoops each now and continue layering.
Reduce the amount of batter gradually until you only pour 1 scoop of each batter finally. The circles become smaller and smaller as your pour.
Bake at 180 degC for 45 minutes. Let cake in pan for 10 minutes before turning it on to a wire rack to cool complete

Zebra Cake (Failed)




This is the zebra cake i make yesterday, still failed. The bottom like the previous zebra cake even i change the water to hot water. I get this recipe from Jo's Deli Bakery.

Here the ingredients and method.

6 eggs
110g castor sugar
150g cake flour
1/2 tsp baking powder
1/2 tsp emulsifier
100g butter (melted)
30g condensed milk
1 tsp vanilla essence (optional)

2 tsp cocoa powder
3-4 tbsp water
1 tsp choc emulco
Dissolve cocoa powder and choc emulco in water


  1. Preheat oven at 170 degC. Prepare and grease a 8 inch round cake pan.
  2. Sift flour and baking powder. Set aside.
  3. Beat eggs, flour in (2), castor sugar and emulsifier on high speed for 10 minutes or until batter turns light and creamy, i.e. thick ribbon state. To test, lift beater. Batter drops from beater should disappear when you count from 1 to 10.
  4. Pour melted butter, condensed milk and vanilla essence (if any). Mix at slow speed.
    Divide batter into 2 equal portions. Fold chocolate solution into one of the batters.
  5. Using tablespoon, scoop 3 tbsp of uncoloured batter into centre of cake pan. Then, scoop 3 tbsp of chocolate batter onto the uncoloured batter you just scooped into the pan.
  6. Repeat until you have finished about half of the batter. Reduce to 2 scoops each now and continue layering as (6). Reduce the amount of batter gradually until you only pour 1 scoop of each batter finally. The circles become smaller and smaller as your pour.
  7. Sprinkle almond nibs or flakes to cake. Bake at 170 degC for 35 minutes.
  8. Let cake in pan for 10 minutes before turning it on to a wire rack to cool complete
